No clue why the plane hopped up. Initial landing looks harder than it is from the loose Ezdok settings.

 

I thought all runways were perfectly flat in FSX or is there some other glitch going on?

Most are, as it's a requirement for AI to operate on them. Some designers have made slope runway airports, but you won't see AI on them. They're pretty cool though!! Here's one!
