Hi, happy new year for everybody. Is there any way I can review my selected SID or STAR before inserting it in PMDG MD-11 FMC?  or deleting it after inserting and selecting a new one?

No need to delete it. Just select again theairport/ waypoint you want to transition from and select a new SID/ STAR

No. Gotta be familiar with the charts and hope that they match the nav data in your plane. Afaik, the FMC takes the pains of calculating path, turns, speeds and altitudes only upon actual insertion.
