I currently use FRAPS, but was interested in learning if there are better inflight recording software available.  

 

In addition, has anyone had any success using a webcam to record off their screen, or would that be too grainy?

I would and do use FSrecorder. I downloaded the version (I forget which one) which has a built in rendering version. You record your flight leg or whatever you're recording, then you can render the clip at a desired framerate. Only downside is that due to the rendering process, there is no sound. But you can always use fraps to record the sound, or import real world sound clips.
