You don't do it from the free flight menu. Start a flight with the ngx, then use the menu in the FMC to get to the panel load states and select the cold and dark one. Based on your question, I would suggest reading the intro manual. It will prevent many more questions like these so you don't have to wait on someone to answer you.

To answer your question, however:

  • Set up your flight in FSX (select the aircraft, location, time, etc) and click fly now.
  • After the plane loads, click on PMDG SETUP>
  • On the right, you will see panel state options.
  • Click on STARTUP STATE (or whatever it happens to be - it definitely refers to "default" or "load" or "startup") and then select COLD AND DARK.
  • The plane will now load with the COLD AND DARK state any time you select it from the FSX menus.

Please read the intro manual.  It has lots of very important information in it, and it could've answered this question for you (with pictures, too).
