I recently got some switches and circuit boards from Desktop Aviator - and realized I don't know how to access commands for things such as OBS, HSI rotation, gps commands (such as those needed for the RealityXP stuff), etc.

 

What's the best way of doing this?

For my money, FSUIPC and LINDA. You will need the paid-for FSUIPC. Assuming you have this you could check out my own LINDA library, which will already do all of this, including for the RXP. Actually the RXP is a pain because you can only drive it with keystrokes, so you will need to be very methodical in planning which keystrokes you use.
