The blue lighting is dim. Can it be changed to an amber or off white shade to make reading the panel easier?

I don't think you can simply adjust brightness or color, without some serious coding and PhotoShop skills. In VC cockpits, the lighting is usually coded with textures for night lighting. You could add a VC light, and tie it to the panel lighting, but over time, I've found that usually causes visual issues with the VC textures.
