Is one GTX1080 enough for VR in P3DV3

Yes you will be fine.

 

If you can get a second one then Flyinside will run VR-SLI with P3D Only (no FSX).  VR-SLI (google and read about it).  There are literally very few apps out there which leverage VR-SLI and Flyinside is one of them.

 

But for almost all other games one 1080 will be more than enough (since many games do not support SLI and then you could have scaling issues in rift)

 

Try with one first and then see if you need VR-SLI

 

I use 2x980s.  Some times I have turn off SLI in VR for other apps
