I'd like to modify the fuselage of aircraft to add airline branding, is it possible to take an already defined aircraft and re-model it?

If I understand you correctly you want to just change the visual paint scheme to match an airline? That doesn't require changing the model. All you need to do is repaint the exterior textures.

I have an Airbus A330-300 which i'd like to have with Qantas markings.

Who make this plane (Project Opensky, Rikooo)? Freeware I am assuming?

 

Just search the library here or google search the paint your looking for that author, model and livery and download and install.
