Can the 737 reboot be started at taxie or before takeoff or does it need to start at the beginning?

You can start it anywhere.

All you need to do is advance the FS2Crew mode (as displayed on the main panel) to the desired position (ie., before takeoff) and go from there.

You do not need to start from the beginning.

You do not need to run the Pre Flight events.
