Best 2 Monitor setup

I've been pondering going to a 2 monitor setup for a while. 1 for cockpit 2nd for external / other views. 

Currently have a Acer 34 XR. 

Now, what should I do? 

1. add a 2nd XR 34 (pricey)
2. add an additional 27" (or so) for cockpit view? 
3. go to a 2 monitor 4k setup? 27" or so? 

Current system is i7-6700k @ 4.5Ghz - GTX1080.

I have a 2nd monitor which I would like to show the main 3 instruments and the FMC on . Is there a way to set this up for all planes so I do not have to set it up for every plane and every time I start the sim? Is there a program I can buy for this?
