There is a black wheel labled UP and DN on the center console between the seats (below the blue Speed Brake lever) that controls the VS value for the AP.

There are two wheels there -- a horizontal one for aileron adjustment, and a vertical wheel for pitch (VS).  Right and Left clicking with the mouse, or using the mouse wheel, should change the VS setting. If that doesn't work, get the latest Beta version which I understand is Beta 2.6.  Beta 2.5 was corrupted and maybe is the reason you are having this problem.
