1. Need FL375. P2A forces FL380, will not allow FL375.
2. What is the correct way to change flight plan altitude without having to validate and file the flight plan every time?

1. Try checking the "ATC Ignores Bearing Based Altitudes" on the FltPln tab of config.  

2. After airborne, you can request a new cruise altitude from ATC.  For example "<CallSign> request new altitude of Flight Level 240"
