There used to be a menu, available during a flight, that allowed the user to make changes such as a choice of a 2d or 3d cockpit, changes to control settings/sensitivity and more.  Is it still available?  If so, how would I access it?

That would be the Esc key menu I think. There are three areas where you can adjust settings such as graphics settings, assists and key assignments.

There is no 2d cockpit.  But yes, if you press Esc you can get the options.
