Here's a good video on how to edit an altitude in a flight plan. Essentially, on the MFD flight plan page you highlight the altitude in your flight plan with the cursor using the outer FMS knob, and then use the inner FMS knob to make the changes.  If the flight plan does not have altitudes listed to edit, that is because there are no procedures included as part of the flight plan (this is a limitation of the current G1000NXi development). What I learned is you can always load a Visual Approach procedure at your destination if no other approach procedures are available to force altitudes to be displayed.
