I seam to recall one of the updates changing a few assignments or re-setting them.

Norm, I know this is a simple thing, but try making sure you are on the "default Tab" for your keyboard settings in MSFS and not a custom setting. See if that fixes the ESC key issue.

If that does not work, and with all the other issues you are having with disappearing tabs, it sounds like you may have a corrupted installation. As noted above, the ESC key has never been changed with any MSFS updates. I know is a pain, but perhaps a fresh new installation might be in order.
