which source is better: Steam or Microsoft Store? I'd like to have more control about the folders like I have with FSX / P3D.

seems  that steam  users  have  less  hassles  with the   store  version,   so if  you already  got  a  steam  account  than  steam is  the  way  to go

While MS Store files are encrypted my understanding is that Steam files are not so if this is your key requirement then Steam is indeed the way to go. I am happy with my MS Store Version though as I literally don't fiddle around anymore with files, editing cfgs or hunting fps, out of the box store version is just fine for me. just for the record, in case you intend to play (also) on XBOX then Steam would NOT be the way to go as only the MS Store version offers cross platform playing/flying with 1 license
