Assigning controller settings to a specific aircraft (???)

Is it possible in MSFS to assign specific settings (own profiles) to a specific aircraft???
For example, when I get into the MD-82, I would like the appropriate profile of the VR controller, joystick, etc. to be loaded automatically.
So that I don't have to change it every time in the equipment settings ...

Of course. Open up Controls Options, copy an existing profile (probably default in your case) and make the changes you want to keep via the Preset Manager (bottom left of screen). Create a copy of each of the devices you have connected for specific aircraft if you need to.

You can create multiple controller profiles but unfortunately you can’t assign them automatically to an aircraft.  I use FSUIPC to do that for me

LorbySI Axes and Ohhs (AAO) will automatically assign control profiles to aircraft as well.
