I had to Google "guibal" and the only hits I got on that were for a fashion designer named Manuelle Guibal.

Sorry, I used translate,

I want to see the X-plane 11 cockpit interior view and exterior view at the same time. You can think of it as 2 different monitors.
One will show the cockpit interior view and one will show the cockpit exterior view at the same time. 

Unfortunately we do not have that in X-Plane. There is only 1 camera position.

But I can't find anywhere he talks about how this is set up.

Interesting (around 44:25).

I believe he did that with footage from a second X-Plane instance (on a second machine networked aka "External Visuals" – although 2 X-Plane instances on the same machine work that setup is not officially supported and of course stupidly resource-intensive). My guess is he did it during post-editing of the video.

There are a few ways.

Most youtube videos will be done via replay & post editing.

You can set up a second+ machine(s)/xplane installs as an external visuals - lot of the multiple 4K+ setups do this

additionally - the Xplane SDK includes XPLMCamara, you'll see this used on some helicopters and planes. which gives you a second, controllable POV that can be added to cockpit instruments or popout window via a plugin (i.e. a search and rescue/targeting camera view).
