I have had to change my star and approach using APPR - DEP PROCEDURES button and also need to delete a waypoint (VALMA-DME-30), but clicking on DEL WPT is doing nothing.

You cannot modify a published procedure in the flight plan.  The best thing to do is to delete the SID if it isn't appropriate for your departure.

Once airborne, you could request direct to VALMA and would most likely get cleared direct. 

Or, just enter the 2 or 3 waypoints you want into the flight plan as "Direct" waypoints, without the SID.
