My specs are below.  I run MSFS 2024 and currently have driver 591.86 installed.  I was messing around and asked copilot based on my specs, what Nvidia driver should I be using and they said that the 3080ti's best choice for smoothness, etc would be 566.14.  What do you all think about that?  Am i doing a disservice using 591.x or is that better?

Try them and find out, it only takes a few minutes of your day to install the new ones and see. If you don't like the results, it's another few mins to go back to another set. What works for some isn't the same as what works for others.
