Questions about iFly 737 Max and VNAV
How would you descend without dialing in a lower altitude?

Questions about iFly 737 Max and VNAV
Correct. Technically, you can dial in the field elevation and VNAV would take care of things. It rarely happens though because of several factors. You must dial in a lower altitude though. That's just how it is or the aircraft will stay at cruise altitude.

Questions about iFly 737 Max and VNAV
If you were descending from FL380 to 10,000 via the STAR for instance, you could dial in 10000 and it should meet the constraints if there are any and keep you on path. The plane in VNAV will not descend unless you dial in a lower altitude. Same with Airbus, they just call it managed descent. Is that what you're referring to?

iFly 737 Max is out now (Pre release only)
I was referring to the engine parameters, not the secondary ones. Got confused.

At first you couldn't monitor the engine display on takeoff? I could understanding PM not having engine displays, but the PF should at least, unless I'm confused at what the other guy was getting at.

It's not SOP to blank the engine display.
