AI models are basically models designed with less detail/lower polygon counts for lower resource consumption, made for the purpose of being used as the computer-controlled air traffic in the flight simulation environment.There are many groups offering different options to get more life-like traffic in Microsoft Flight Simulator, one example is World of AI which offers a good free compilation.

Basically it means that it is a Non Player Controled aircraft that are flying around the simulated world in this case.
