I don't think so... I presume itunes gift cards only work in the app store. No FSX addons are in the app store.

There are a few FSX addons that are designed for the iPhone, iPad and iPod. Just go to iTunes and do a search using the term "FSX". But 99 percent of all addons are sold directly via the vendor or via 3rd party sites like Simmarket, Aerosoft, etc.
