When i use a joystick i can rotate my chase view all around the plane by using my hat switch.

 

How can i do this with a mouse and keyboard only?

Press the space bar to toggle control of the airplane with the mouse and looking around with the mouse.

right mouse button click and hold, move mouse around.

To alter the viewpoint click and hold middle (3rd) mousse button and move mouse around.

Right button did the trick!

On a similar note, I find that using my joysticks hat switch to look around gives me a jerky motion while panning, yet looking around with the mouse is smooth. Is there a fix for this?

Joystick sensitivity can be adjusted. Search tutorials.
