I've also read the FSX Bible post. I'm going to ask that they disable UAC and windows defender, but is there any other software issues I should ask prior to the build?

Get rid of the Raid. I've seen multiple places that say it is no benefit and could actually cause stutters.

That system would kill fsx :-) very nice.

 

I would personally also not use raid.

Agreed no RAID. Looks pretty good.
