Yes, I have this issue too.

I'm currently running a clean install to see if this helps at all.

Beech Baron: Uh, Tower, verify you want me to taxi in front of the 747?
ATC: Yeah, it's OK. He's not hungry.

X-Plane 12 and MSFS2020  🙂

System specs: Windows 11  Pro 64-bit, Ubuntu Linux 20.04 i7-13700KF  Gigabyte Z790 RTX-4060-Ti , 32GB RAM  1X 2TB M2 for X-Plane 12,  1x256GB SSD for OS. 1TB drive MSFS2020

I already tried a clean install - made no difference. Tried running a flight with no weather - made no difference. Going to try running a flight without any controllers connected to see if its something controller related. For now though it's exactly how you describe. Everything's good up until 8x sim rate. Then the plane starts weaving and eventually turns completely around even though the navigation display depicts you still heading toward your next waypoint. Also considering disabling FSUIPC to see if something there is causing an issue.
