I'm just new to X-Plane and I having some trouble getting the controls set up. I can find options to move the camera direct to a certain position, but I cant find which I need to use to pan around with the hat-switch and I cant find the pan-reset function. I already noticed that a lot of names for controls are different from FSX/P3D, what i'm used to, so I think the problem is that I dont recognise how its called in X-Plane.

 

Which functions do I have to use to pan and reset my view in the cockpit?

Use "pan left/right" or pan "left/right fast" (very right column in the basic buttons tab of the joystick settings).
To go back to your default forward view I recommend to set one of the quick views for that and assign it to a joystick button too.

 

AND: You should install the free plugin "x-assign" which lets you save all button settings and axis config and more PER AIRCRAFT.

It's a must have and works brlliant. You can download it at x-plane.org (maybe at avsim too?).

I tried all the left/right options now, but there's none that pans, I only find some that make a direct jump to a new camera setting, but none that lets me pan the curent setting.

Also panning up/down. I found one option that moves the camera position down, but already non that moves it up, only back to centre and than nothing. Same for forward/backward, I can move forward (mouse wheel) and return to centre, but I cant find how to move backwards and my view is on top of the panel...

 

I installed XPUIPC, since I understand that is an equivalent to FSUIPX which I'm familliar with, so that would also be an option, if only I could find the setup menu.

I can't upload screenshots - so I'm stuck. But I don't understand what's going on at your side too. The pan/tilt commands are there and they work. 

Are you in 3d cockpit view mode? There are some acf that don't have a 3d pit at all. Please try the Baron.

 

You can increase the field of view in the rendering settings screen (at the bottom).

It shows exactly which settings to use for combined panning and "sliding" if you have two hat switches. I use this as a starting point for how I set up my views on a Warthog stick. I have move up/down and left/right on the stick's primary hat, and pan left/right and pan up/down on the smaller secondary hat next to it. I have forward/back mapped to the lower thumb switch.

 

For resetting the view to forward after panning or sliding around in the 3D cockpit, I just map the 3D cockpit key to another switch on the stick and that immediately snaps the view forward. I use TrackIR for landing and sightseeing, but that switch arrangement works well when I turn it off. It's also useful for outside view panning, together with the other camera keys on the keyboard.

 

Everyone has their own personal preferences for view settings, but that post will at least give you some ideas for where to start.
