I would like to ask how can I set up my PMDG 737-800 in cold an dark position?

I suggest you read the manual, it states very clearly how to do that.

I don't have that particular aircraft but generally it will mirror your default flight. So if your default is saved as cold and dark any aircraft you choose will start in that state.

Not true for PMDG. As suggested it's in the manual. Select startup state in your FMC
