Here's a log of a crash when I spoke ready to copy at ENTC. Log has transcript at top, the crash log and flight plan appended to the end.

I used the R19 takeoff to AMIMO 1B SID (AMIMMO), BELGU BELGU 3M STAR to BAVAD for approach to ILS 19R

Thanks for the report and all the detail.  I tried duplicating the problem in v2210 and could not.  It worked fine 3 times for me.

Were you able to duplicate the problem at different airports?  Did you try and restart P2A and then try the flight again?

I did restart P2ATC and continued the flight and it was fine.

The thing I noticed was the recognition log had appended 'and;' to what I said so I wonder if it's something to do with me not releasing the ATC PTT button quickly enough. It's something I noticed it does on a few of the things I say.

That's possible.  It usually will be able to ignore extraneous words like that, but it may have found a meaningful match and took a dive when it didn't hear anything else.
