Just playing with the demo.

1. Does it have a feature where there is a co pilot to switch the radios for you so that I can concentrate on speaking to the ATC?

2. Also, do you need to file a flight plan for VFR or can you just take off after clearance and fly to another airport and then tune into the new airport's approach freq?

Thanks for trying the software.

1. Yes.  Check the speech tab of config.  Details in the User's Guide.

2. You can just takeoff VFR from an uncontrolled airport and fly to another airport, contacting that airport's tower when you get there.  If you contact Approach, they manage many airports so you'll need to tell them which airport you are going to.  You can also takeoff VFR from a controlled airport without a flight plan,  just like the real world.
