I've tried everything I can think of, someone has to modify the game's code it seems. Hopefully someone can develop a mod since Microsoft and Asobo seem to be disinterested in this problem.

I decided to park this one out. I simply dont want to be angry/frustrated anymore. I accept the sim current condition and that's it. Not uninstalling it or asking for refund but waiting for future updates. Finishing now installing P3D, will install Fslabs after and that's it. Its simply unusable at this state.

I tried P3D again and it just looks so blah in comparison. The unreal weather METAR injector is a temporary workaround to the lightning and it's free.

I'm more annoyed with the game suddenly freezing and crashing all the time when I didnt have that problem until recently.  On top of that, 50% of the time saved flight file deletes all weather and it's impossible to change the weather in a reloaded flight for some ridiculous and absurd reason.

Does it do wind aloft ?

I think it randomizes winds at higher altitudes but doesnt replicate them. There are 2 things I dont like about it, though. The weather is uniform based on your location - e.g. weather isn't different on the horizon. Also, the wind transitions are really annoying and violently rock your plane for a few seconds. I think you can play around with the settings to smoothen out transitions though.
