I wonder if this is like Ace Combat or maybe (hopefully) a tad more toward the sim end of things.

I really wish there was a combat flight sim somewhere in between DCS and Ace Combat.  Something more casual than DCS (if i don’t fly the aircraft on a regular basis i can’t remember how to do anything) but more realistic then Ace Combat (I think there was a button for speed bursts when I tried Ace Combat 7).  The Jane’s US Navy Fighters series etc was always my sweet spot.

I like Wings Over Flanders Field and Wings Over the Reich, wwI and wwii combat sims. While hardcore combat, and tough AI, there are realism settings. But while combat is hard, flight and control of the plane is not. There are 3rd party add-ons to calibrate the anti aircraft gun fire from the ground below and tone it down to a more realistic level.
