So rather than go from a cold and dark A320 FBW flightdeck state when I load up FS2020 is there a way to have a turn around flightdeck state when I load the aircraft?

Unfortunately not.

There are only two options: Load up on the runway ready (almost) for take off, or load up at a gate/parking spot cold and dark. Nothing in between.

Unless someone knows of a mod that does differently...

And of course you can always use Multi Crew Experience, set up a flow and have Multi Crew Experience put your aircraft in turn around state within seconds by a voice command.
