I just built a new PC with a 12700K and decided to stick with a DDR4 board for now. I went with an MSI Pro Z690-A (Non Wifi model) and have been very happy with it.

A lot will depend on what GPU you have,

I am very happy with my 12700K, I even have a slight overclock with all P-Cores at 5.0Ghz and all E-Cores at 3.9Ghz. I am actually running a lower core voltage than the stock settings had and have had zero stability issues.

My GPU Is the RTX 3070ti. Thought MSFS doesn’t like over clock CPU

I know a lot of people seem to have problems with MSFS and an overclock but I have never had issues. My old i5-9600K was overclocked to 5Ghz on all cores from the day I installed it and never had any issues. I always made sure I was stable by running some stress tests before using the sim. Once I knew I was stable I would do a few flights in my most demanding aircraft and monitor voltage & temps. MSFS will not stress your CPU anywhere near something like Prime95.

The best way I found to find out how to overclock any CPU is google overclocking the CPU & motherboard combination. I cannot stress though if you are upgrading components you need to make sure you are 110% stable before doing anything. When I built my current PC once I knew I could post I checked all my hardware was showing correctly in the BIOS and CPU temps looked ok then installed windows 11 and performed all the updates. Then I did some basic stress tests and then I upgraded the BIOS did a couple more tests and then enabled the XMP profile for my RAM. Once all this looked OK I used MSFS for at least a week with different aircraft and locations. If everything is ok you could then look at an overclock. I also made regular images of Windows 11 using Macrium reflect as I installed software and configured the PC. Before attempting any overclock I would also use your BIOS utility to make a backup of your current settings.

To be honest I don't think a 5Ghz overclock on the 12700K makes a huge difference other than allowing me to fine tune my voltage thus improving thermals a little more. Your mileage may vary of course.
