Could really use some help...

Upon further testing I noticed my M2 Nvme disk is the only one detected. It is the drive where Windows 10 is installed but it won't boot into Windows. I was able to boot into recovery mode by using an USB drive. None of the recovery option work though... 

I tried the "Startup Repair" option first but after a few seconds I get a "Startup Repair couldn't repair your PC" message. 

Using the "Command Prompt" option I can see and explore my C:\ (boot) drive.

Both my D:\ and E:\ drives are not detected using this method and do not show in BIOS.

This may not help but I had an issue yesterday with an old pc where I updated BIOS and then when it restarted, even though I could see the boot drive in BIOS, Windows said no boot media detected and tried / failed a repair. After some Google work I found out that in resetting the new BIOS to optimised defaults it had changed my boot drive type - so make sure in BIOS the boot drive is correct i.e. AHCI or raid and even try changing it to RAID even if it isn't set up as an array and that may get it to boot. If it doesn't help then no harm done.

My PC is running again.

A few days ago, when I replaced my faulty 850W PSU with the 650W one, I was lazy and didn't feel like doing all the cable management again. So I replaced the PSU but kept the "old" cable that powered my SSD and HDD.

Yesterday not knowing what else to do I replaced the "old" cable with the one that came with the 650W PSU and voilá... all my drives were recognized and my PC booted into Windows like nothing ever happened.

I still don't understand why it didn't boot to Windows in the first place since Windows is installed on the M2 Nvme drive but I really don't care. It's working and that's all that matters.

Oof, you're lucky then...the pinouts on PSU cables are not standard/universal at the PSU end--good thing there wasn't power on a grounded pin or vice versa--that would have let the magic smoke out of your drives, and everyone knows that they only work if you keep that smoke inside the unit...  😉

True, modular PSU pinouts are not standardized, wish they were, but they are not.  You are fortunate that nothing got fried when using the old cables with the new PSU.
