I am wondering what the difference is between the URSA MINOR Airline Joystick L and WINWING Orion2 Airbus A3XX except the price. I heard of a RL Pilot that the URSA one is supposed to be excellent but what about the Orion 2?

Is there anything out there that considered the best under 500 USD/Euro?

I believe the WINWING Orion2 Airbus A3XX is discontinued. They do sell the WINWING Orion2 ViperAce(EX) though, and t's a very good piece of hardware. But beware, only for RIGHT hand.

Their URSA MINOR Airline Joystick L is a very reliable joystick for the price, with many buttons.
And yes, if you don't need an ultra precise and fast stick like those for military fighters, you will really enjoy it.
Another one I can recommend is VKB's Gladiator NXT EVO. Very good quality, the kind of device you can keep for years thanks to their excellent after-sales service and their large spare parts catalog. They have right and left hands joysticks. But they are for now out of stock, victim of Xmas fever 😊

They are so well manufactured, of such quality that they absolutely come close to the specifications of the military aeronautics industry. I am lucky to own one, and I could never go back.
However, the delivery time is very long, 4 weeks on average, which can be off-putting.
It should also be noted that these products are not really plug and play like the previous ones I mentioned, and that it takes a certain amount of time and a little patience to get to grips with the software that comes with them. Well... I am not really a young person anymore, and your brain is probably more flexible and faster than mine :).
Don't hesitate if you have any questions, I studied the market carefully before buying my Virpil and I tried many before making my choice.

It's not discontinued. I actually ordered the WinWing Orion 2 Airbus Joystick today, and it should be arriving tomorrow.
