I am looking at buying a laptop with a 2560 x 1600 screen .My question is would a 2560 x 1600 screen distort the cockpit or scenery image compared to a 2560 x 1440 screen ?

The sims have been adapting to different screen sizes since FSX, so your 16:10 will fit fine. 16:10 is very close to 16:9 anyhow which is standard for modern displays.

It's the same if you hooked up a second monitor to your laptop.

Nothing will distort  on a 2560 x 1600. You will just see slightly more of the lower dash in the view. But will look natural in windowed and in full screen mode.
