Hyd levels will fluctuate as you use devices using hyd pressure. For instance raising the landing gear will substantially decrease the amount displayed on the sys page. Once you move the lever to OFF the level should raise again as the fluid is returned to the reservoir!

There seems to be an issue regarding OIL QTY which decreases as you accumulate hours but no way to REFILL. Some have suggested starting each flight from the original default "cold & dark" setup to start with full fluids. Full oil should be 20 quarts but hydraulic (in percentage) will always show reserve of less than 100% since fluid is being used within the systems. As far as fuel is concernced, you control that yourself by what you fill into the tanks. Altitude, airspeed, length of flight determine how much and how fast it is being consumed. Hopefully SP1 will have adequately addressed the fluid issue to at least allow a maintenance selection to REFILL when low.

RE: fuel levels... You're using the PMDG options on the CDU to set fuel load & not the default FSX tool, right?
