I noticed just now, during my last flights, that the Starter switches stay on CONT. Shouldn't the copilot set them to OFF...? Or am I supposed to do that?

What stage of flight did you notice this? Landing, cruise etc.

If anti-ice is on I think he let them stay in CONT.

That is correct... when anti-ice comes on, the start switches go to Cont (FO moves them).
