According to google, and to FEDEX virtual, the max paload of the MD11F is around 200,000lbs, however I can only go as high as 170,000lbs in the load manager. Screenshot:

There's also a size limit on cargo. Each container usually weighs a different amount. This is not taken into account in this simulation of the MD-11 (just as variable passenger weight isn't in the passenger variant). Since the load manager has a set weight for each palate, this is to be expected.

 

I can't remember if you can manually set the ZFW using the PMDG OPTIONS menu in the sim. That might be able to side step that issue for you.

I use the FS9 version, and if I select the MD-11F and click "Full Cargo" it shows 210,300 lbs  !
