Windows 10 privacy and step to care

I am new to this system and I have read that microsoft is recoding all your abitude but I would like more clarification.

Second I have a WIN 10 PRO license,

what version should I have and what is the normal step to take care of all update, that microsoft normally do?

Is there any trouble with P3d or Xplane?

O&O Software have a neat free antispytool for Windows 10 tool called ShutUp10.

You can run it against Win 10 automatically or fine tune it manually if you know what your doing.

Win 10 Pro works fine with P3D, in fact it is recommended by LM.
