Heh, he's not THAT devious. :) We hope to have a demo in August but keep in mind we are actively working on the full product nothing is set in stone yet.

As the demo will be a lot smaller than the finished product is it a lot simpler getting it ready?

depends on what parts of the full product it needs.Omitting some scenery and aircraft isn't going to do much for complexity, only download size.Omitting part of the physics engine or weather generation system would, but would reduce the usefullness of the demo.

Not really. The difference is content, not code. Also, keep in mind anything shipping, er, this far before "Holiday 2006" is likely to be pre-release code. ;)
