Does anyone know what happened to the control in MSFS where you can turn icing on or off?

Still there - It's under Assistance Options > Failure and Damage > Icing Effect

Why does it say Volocopter on top of the assistance menus, and it is grayed out so it can't be changed???

What are you flying in? If it's the Fenix they lock you out for changing the assistance options so it doesn't mess with how the aircraft flies. You should be able to change them when you're back on the main menu after your flight.

Well I can change the settings, but as I said the title for all says VOLOCOPTER... What does that mean?

I can't remember why it's named "VOLOCOPTER" (apart from the actual volocopter you get within the sim) - Maybe that is a preset and it just has the desired settings Fenix is looking for and it forces it to be on that when you're using that plane.
