Press and hold RIGHT - Alt key and click with your mouse on the instrument panel that you want to undock. Are you sure you are using AltGr (the right alt key)? It works like a charm for me, I don't know, though, if this will work with PMDG's aircraft as well. Try temporarily changing screen resolutions within Windows and see whether the panels suddenly appear again.
