I'm looking for a separate/universal AP that'll work with most add-on aircraft. If you have one to recommend I'd appreciate hearing about it.

See if you can find "Wefly Autopilot GPS." I bought it for P3D back in 2015 from FsPilotShop. Don't know if it's still available or where, but it did what you're asking and worked with most (some) addon planes. Carenado and the RealAir Dukes for sure.

Something else to consider is the Stream Deck (but that's pricey) or similar hardware.

Not sure if this is what your looking for, Jon Dyer has made some freeware gauges based on real models including the Bendix KAP 140 and 150 autopliots. Unfortunately, they are not available in the AVSIM library but are available over at Flightsim.com. 

Specs: black box thingy with spinning fans, lights and a bunch of wires that go to screens with pretty colours and a keyboard with many keys. The black box thingy also has a push button activated coffee cup holder.

I no longer have P3D installed but I remember having to put the autopilot-gps folder into the P3D Gauges folder and call the autopilot-gps by adding the gauge in the panel.cfg. It might have an auto installer, too.

Searching for "Wefly autopilot GPS" brings up a multitude of hits which might further help you.
