AMD Ryzen 5600x, 32GB RAM, GPU Nvidia RTX 3060 Ti 8 GB, 1 TB and 500 GB nvme2 SSD drives, HP 27" 60Hz LED monitor @ 1920x1080, T16000, Hotas from old X52 Pro, Saitek Combat Rudder Pro (2010 model)

In the manual:

Once you download Microsoft Flight, you no longer need an Internet connection to play. Simply start the game and skip the sign-in process. If you play offline, your game progress is saved and your Pilot Profile will synchronize the next time you sign in with your Games for Windows – LIVE profile and password. The following features are NOT available when you play offline:
  • Aerocache hunt
  • Message of the Day
  • Downloadable content
  • Text chat
  • Voice chat
  • Games for Windows – LIVE functionality
  • Multiplayer mode
  • Marketplace
  • Profile updates

If you want to use those features, you need to sign in but you can just appear offline to contacts and in the multiplayer settings make it Private so people can't join your game.EDIT: are you saying it automatically signs you in? Sorry I'm on a Mac now so I can't test it, but I think you can sign out by pressing the Home button and pressing sign out?

  1. Press the "Home" key to open the LIVE control panel
  2. Click on your Gamertag icon (top left side)
  3. Click on the last menu item to set your auto sign-in preference

After you have selected to NOT automatically sign you in then you can sign on yourself with your Games for Windows Live ID. If you are NOT connected to the internet then you will get another pop-up box about not being able to sign on to LIVE. Just answer OK and you will be taken to the game offline. If you just have the free version and you have not purchased anything online like the add-on content then you can just hit ESC when it comes to the LIVE sign in and it will take you to the offline game.

I haven't found a way to disable the Live log in. If you try to skip the log in screen it just keeps coming back until you log in. The only way I can play without logging in is to disable my internet connection. Then it displays an error message that you are not logged in and loads the game. I wish there was an option to disable it.

I don't believe that there is a way to disable the LIVE log in. I've gotten used to it. It just takes a second to login and then you can get to the offline play.

You have to be online to purchase DLC, of course; but do you have to be online to play that DLC after it's been purchased and installed?
