I always hand fly the sid/departure up through 10000 agl or fl180 depending on the plane, afterwards i engage the AP as setup via the fmc.

Landings i hand fly from about 15-20 miles out unless conditions arnt permitting.

 

I enjoy the feeling of acomplishment when you make that -50fpm greased landing, get all the bonus points and know you did that yourself, versus letting the computer do everything. Whats the point of flying if you never actually fly the plane? Seems like wasted time imo

I personally like to have auto throttle on as I feel it manages the speed better and i can concentrate on the FD direction.

I used to like doing this for the same reason, but it is recommended, at least for Boeing aircraft, that manual throttle control be used during manual flight. This is because you can anticipate necessary pitch corrections and adjust the throttles before making them. For example, if you sense that you are descending below the glide slope, you can increase the throttles prior to or while you are increasing pitch, thus preventing thrust demand lag and more-accurately and consistently maintaining speed.

Climb out: up to 5k

Landing: I assume control as the GS indicator is one above

I used to do this at Hong Kong. FlyTampa Hong Kong is a detailed and performance-friendly scenery, and the approaches to Chek Lap Kok and Kai Tak are very different. You also have a nice blend of islands, mountains, and water.
