Is it possible to change the name of an installed aircraft like in FSX so they display differently?

You should just be able to change the name of the aircraft's folder.

That's what I thought but it doesn't seem to work for all aircraft.

Open the aircraft using Plane-Maker, then go to "Standard"->"Author" menu, and change the "name for X-Plane UI" field. Then save the aircraft.

 

Be advised that every time you update X-Plane, the updater will detect any changes you made to default aircrafts, and will ask you if you want to restore the original files or not.
