Of course if you load a saved flight, you can't change the weather.

Also, it would be nice to be able to change the aircraft without going back to the main menu too.

Turn on developer mode and you get a pop up menu to select aircraft.

It is sporadically a little bit buggy (randomly spawns you with no fuel or in a random location with no scenery) which is probably why it is hidden in the developer menu.

Can you provide more details?   Is the "button" on the keyboard or it can be a button on any controller devices?

An on switch on his controller that was programmed for CTRL/E was what I thought.
