In the model folder you can comment out the VC model but you will still see some of the external model with the native MSFS aircraft. Prosim probably has its own model where from the internal camera there is nothing built in front of the camera

This is interesting to me.  It seems like Prosim is the interface software only.  What I would really like to know is where would one get a physical cockpit setup like that (complete package)?

There are actually quite many options nowadays: CP-flight, FDS (flightdeck Solutions), FSC (flight simulator Centre), Opencockpits. 

11 years ago I started with a 737 simpit, FMS + MCP + EFIS control panels. But I am too much of an aviation geek to simply fly one model (B737 in this case) so I parted ways with my stuff. Good thing is many of these parts have excellent re-sale value. 🤘
